How to Source Vegetables Wholesale by the Case

Wholesale vegetable buying starts with a usable-yield plan, not a case price. A buyer needs to know the pack hierarchy, whether the product is trimmed, the storage temperature, and how many finished portions the case can support. Without those fields, two cases with similar weights may create different labor, waste, and menu costs.

BoxNCase lists vegetables by the case without requiring a multi-case minimum. The examples below were checked against the live BoxNCase vegetable collection and product pages on September 15, 2026. Price, inventory, and delivery promises are excluded because those fields can change; confirm the current product page before ordering.

Define the finished use before choosing a case

Write the finished use in measurable terms:

  • Raw service: specify the cut and portion volume. Whole green beans, carrot sticks, shredded carrots, and sliced vegetables have different cup-per-pound factors.
  • Cooked service: specify whether the vegetable will be steamed, roasted, sautéed, or held after cooking. Water loss changes the number of portions.
  • Stocks and sauces: calculate usable trimmed weight rather than finished cup portions.
  • Prepared vegetable mixes: verify every component and the form in which it arrives. Do not assume a blend behaves like a case of one vegetable.

The USDA Food Buying Guide separates “as purchased” weight (AP) from edible portion (EP). AP is what the operation receives. EP is what remains ready to cook or serve. Recipe costing should use EP.

Live-catalog case formats and planning yields

Dix Farms Fresh Asparagus Standard — 11 lb case

The live BoxNCase listing identifies this product as one 11 lb case.

USDA’s Food Buying Guide gives whole fresh asparagus these planning factors per AP pound:

  • 0.53 lb trimmed, raw asparagus ready to cook;
  • 0.50 lb cooked asparagus;
  • 4.8 quarter-cup cooked portions.

Applied to an 11 lb case, the USDA factors equal approximately:

  • 5.83 lb trimmed asparagus ready to cook;
  • 5.5 lb cooked asparagus;
  • 52.8 quarter-cup portions, or about 26 half-cup portions.

These are planning equivalents, not a guarantee for a shipment. Spear diameter, woody-end trimming, breakage, cooking method, and doneness standard change actual yield.

UC Davis recommends 32–35.6°F (0–2°C) and 95–100% relative humidity for green asparagus. High humidity limits water loss, but the product still needs airflow and protection from free water. Receive it cold, inspect cut ends and tips, and keep it out of warm prep areas until production.

Dix Farms Green Beans — 25 lb case

The live BoxNCase listing identifies this product as one 25 lb case.

The exact trim state must be confirmed at receiving. For fresh untrimmed whole green beans, USDA gives 11.1 quarter-cup cooked portions per AP pound and 0.88 lb ready-to-cook beans per AP pound. Applied to a 25 lb case, that equals approximately:

  • 22 lb ready-to-cook beans after trimming;
  • 277.5 quarter-cup cooked portions, or about 138 half-cup portions.

For trimmed, whole, ready-to-use green beans, USDA gives a different factor: one AP pound remains one pound ready to cook and produces 12.4 quarter-cup cooked, drained portions. That would equal approximately 310 quarter-cup portions from 25 lb. The difference is why a buyer should not assign a single yield until the case’s trim state is verified.

UC Davis lists 40–45°F (4–7°C) and 95% relative humidity for snap, wax, and green beans, with an approximate storage life of 7–10 days under recommended conditions. Green beans are chilling-sensitive when held too cold for an extended period, so they should not automatically share the 32°F set point used for asparagus or topped carrots.

Dix Farms Cut Carrots, Cello — 10 × 5 lb case

The live vegetable collection lists this item as ten 5 lb units per case, for 50 lb total case weight. The inner-pack structure matters: a kitchen can open one 5 lb unit while the remaining units stay closed.

The current title says “cut carrots” but does not define a finished cut in the title. Confirm the physical label and product specification before assigning a USDA cut-specific yield. For a conservative planning comparison, USDA gives fresh carrots without tops these factors per AP pound:

  • 0.83 lb trimmed and peeled carrots;
  • 10.9 quarter-cup portions when served raw in 5/16-inch slices;
  • 8.16 quarter-cup portions when cooked, drained, and sliced.

Applied to 50 lb AP, those factors equal approximately:

  • 41.5 lb trimmed and peeled carrots;
  • 545 quarter-cup raw sliced portions, or about 272 half-cup portions;
  • 408 quarter-cup cooked sliced portions, or about 204 half-cup portions.

Do not use those numbers as a finished product guarantee. If the carrots arrive already peeled or ready to use, the actual yield can be higher. If “cut” describes only a pack designation rather than a prep-ready cut, the operation may still incur peel and trim loss. Record the received form before fixing recipe cost.

UC Davis recommends 32°F (0°C) and 98–100% relative humidity for topped carrots and notes that ethylene exposure can cause bitterness. Store carrots away from meaningful ethylene sources and keep opened inner packs protected from dehydration and cross-contamination.

The storage figures describe commodity-level recommendations. The physical case label and manufacturer handling instructions control when they are more specific.

Build a receiving specification

Record these fields before comparing case options:

Calculate how many cases to buy

Use one unit throughout the calculation:

  1. Multiply the planned number of servings by the EP amount per serving.
  2. Divide total EP required by the expected yield percentage to find AP required.
  3. Divide AP required by the case weight.
  4. Round up to a whole case.
  5. Compare the surplus with storage capacity, service frequency, and a documented secondary use.

Example: a kitchen needs 100 half-cup servings of cooked asparagus. USDA’s factor is 4.8 quarter-cup cooked portions per AP pound, equal to 2.4 half-cup portions per AP pound. The requirement is about 41.7 AP pounds. At 11 lb per case, the calculation produces 3.79 cases, so the buyer needs four cases before adding any operation-specific safety factor.

Run an in-house yield test

Published yield tables are a starting point. Knife work, vegetable maturity, defect tolerance, cooking method, and holding time determine the operation’s actual yield.

For each high-volume vegetable:

  1. Choose a representative sample from the received case.
  2. Record AP weight.
  3. Trim and prepare it exactly as the recipe requires.
  4. Record EP weight and finished portion count.
  5. Calculate EP ÷ AP × 100 for yield percentage.
  6. Repeat across at least three deliveries.
  7. Use the rolling average in purchasing and recipe costing.

Track trim and receiving loss separately. Stems, peel, and prescribed cuts are process losses. Decay, crushing, dehydration, temperature damage, or unacceptable substitutions are receiving losses. Combining them hides whether the issue belongs to the recipe specification, handling, or receiving standard.

Match storage to the vegetable

A single “produce cooler” set point is not a complete storage plan. The three examples above require different temperature and humidity decisions:

  • asparagus: near 32°F with very high humidity;
  • topped carrots: 32°F with very high humidity and ethylene protection;
  • green beans: 40–45°F because prolonged colder storage can cause chilling injury.

Group vegetables by temperature compatibility, moisture needs, and ethylene sensitivity. Keep cases off the floor, maintain airflow, protect opened packs, and rotate by observed condition as well as receipt date.
